    First: The traditional method of making cheese:

    We show you an easy and traditional recipe for making cheese, through the following:

    Cheese making ingredients:

    • Five large cups of white flour, sifted well.
    • Two large volume cups of liquid whole milk, and in the event that it is not available, six tablespoons of a large volume of dry milk can be dissolved into one large volume of water.
    • Two tablespoons of baking powder.
    • Quarter of a teaspoon of table salt.
    • Two tablespoons of white sugar.
    • Two large cups of cheddar cheese.
    • Two tablespoons of instant yeast.
    • ½ cup large size corn oil or sunflower oil to taste.
    • Appropriate amount of frying oil.
    • A large cup of your favorite nuts.

    Syrup Ingredients:

    • Four large cups of white sugar.
    • Two large cups of water.
    • A small spoonful of fresh lemon juice.

    How to prepare:

    Preparation of the cheese dough:

    • Prepare a medium and deep bowl to prepare the dry ingredients mixture.
    • Add to the bowl the well-sifted white flour, instant yeast, table salt, baking powder, and stir all the dry ingredients together, biting through the wooden spoon until all the dry ingredients are well mixed.

    Cheese fry:

    • Prepare a large deep frying pan suitable for frying cheese.
    • Add an appropriate amount of frying oil to the frying pan, put the frying pan on a medium heat, and wait until the oil heats up well.
    • Start by balling the cheese in the form of balls of your preferred size, and put them in the hot oil with good stirring of the cheese in the hot oil long enough for it to mature well and take the golden color.

    • Five large cups of white flour, sifting the white flour well to get rid of all the impurities in the flour.
    • Two large cups of liquid whole milk.
    • Four tablespoons of cream cheese.
    • Two tablespoons of instant yeast.
    • Four large cups of sherbet.
    • ½ cup large size corn oil or sunflower oil.

    How to prepare:

    Preparation of the cheese dough:

    • Prepare a medium-sized, deep bowl suitable for making cheese dough.
    • Add to the bowl the sifted white flour, the instant yeast, stir the yeast with the sifted white flour well using the spatula until they mix well.
    • Then add the oil to the flour and yeast mixture, stirring well all the ingredients until the oil blends with the mixture.
    • Then add the liquid whole milk, stir the milk with the rest of the ingredients well, until the milk is completely mixed with the flour, yeast and oil mixture.
    • Finally, add the cheese.
    • Put all the ingredients in the electric mixer, and knead all the ingredients well and for a sufficient time until you get a suitable and cohesive dough well.
    • Cover the bowl with a tight nylon bag, and leave it in a dark and warm place until the dough ferments and doubles in size, taking into account leaving it for at least sixty minutes.

    • Prepare a frying pan suitable for frying the cheese so that it is deep and medium in size.

    • Leave the cheese in the hot oil long enough for it to settle well, taking care to stir well from time to time until it is browned on all sides.
    • Take out the cheese after making sure it is done and fry it from the hot oil on blotting paper until it is completely dried from the oil.

    Serving crunchy cheese with cream cheese:

    • Put the syrup in a bowl suitable for it, taking into account that it is completely cold.
    • Take out the cheese while it is hot and after drying it from the oil to the cold syrup, stir it well with the syrup and leave it with it for three minutes.
    • Prepare serving dishes suitable for serving cheese, add to cheese dishes, and the dish can be decorated with nuts.
    • Serve cold cheese dishes with your favorite cold drink, such as: iced natural juice, or with your favorite hot drink, such as: a cup of coffee, a cup of tea, a cup of Nescafe, a cup of cappuccino, a cup of cocoa.

    Ingredients for making cottage cheese with kiri cheese:

    • Four large cups of white flour, sifted well.

    • Two tablespoons of instant yeast.
    • Two tablespoons of baking powder.
    • A large glass of lukewarm water.
    • Six tablespoons of a large volume of dry milk.
    • Appropriate amount of frying oil.
    • An appropriate amount of cold syrup.

    How to prepare:

    Preparation of the cheese dough:

    • Prepare a deep bowl suitable for kneading all the ingredients to make the cheese dough.
    • Add to the bowl: sifted white flour, dry milk, instant yeast, baking powder, stir all the ingredients together until all the ingredients are well mixed.
    • Add the Kiri cheese to the dry ingredients mixture.
    • Put all the previous ingredients in the bowl of the electric mixer, and knead the dry ingredients mixture with the Kiri cheese pieces for two minutes.
    • Then gradually add the lukewarm water, while continuing to knead all the ingredients for a sufficient period of time until you get a dough of a homogeneous and cohesive texture that is suitable for cheese.
    • Cover the bowl of the dough with a tight nylon bag, and leave it for a sufficient period of not less than fifty minutes approximately, until the cheese dough is well incorporated and increases in size well.
    • Prepare a hard surface suitable for spreading the cheese dough, clean the surface well, and sprinkle an appropriate amount of flour on it so that the dough does not stick to the hard surface.
    • Start rolling the dough well on the hard surface, and by using the segments of different shapes start cutting the dough into different shapes.

    Cheese fry:

    • Prepare a deep, medium-sized saucepan suitable for frying cheese.
    • Put the pot on medium heat, add to the pot a large amount of frying oil, and wait until the oil heats up well.
    • Add to the hot oil the cheese of different shapes, stirring well for the cheese in the hot oil until it turns red on all sides.

    Ingredients for making cheese for Manal Al Alem:

    • Six large cups of white flour, sifted well.
    • Six tablespoons of a large volume of dry milk.
    • Half a large size cup of white sugar.
    • A teaspoon of baking powder.
    • One tablespoon of table salt.
    • Two tablespoons of instant yeast.
    • Half a large cup of corn oil.
    • Two medium size eggs.
    • Two tablespoons of liquid vanilla or powder, as desired.
    • A large size cup of cheese cups.
    • One and a half cups of warm water.

    Filling Ingredients:

    • Twenty pieces of cream cheese.
    • Ten dates, with the seeds removed, and cut into small pieces.

    Presentation Ingredients:

    • Two medium-sized cans of sweetened condensed milk.
    • Two tablespoons of fine powdered cardamom.

    How to prepare:

    Preparation of the cheese dough:

    • Prepare the electric mixer, add to the mixer cup each of: sifted white flour, unground white sugar, baking powder, instant yeast, mix all the dry ingredients together on medium speed for about a minute or until all the dry ingredients are well mixed.
    • Then add to the cup of the electric mixer corn oil, mix the oil with the dry mixture of ingredients well until the oil mixes with the mixture well, then gradually add the eggs, and continue mixing at medium speed for four minutes until the eggs are mixed with the mixture of dry ingredients and oil completely.
    • Then add the vanilla and water, continue mixing all the ingredients together until they mix well, and finally add the cheese pieces, mix all the ingredients on a high speed for a sufficient period of not less than five minutes or until you get a dough of a soft, homogeneous and cohesive texture.
    • Put the dough in a suitable bowl, then cover the bowl with an airtight nylon bag until it is well fermented. Leave the dough bowl aside for a sufficient period of no less than sixty minutes approximately until it increases in size.
    • Clean a hard surface suitable for rolling out and cutting the dough on it, then add an appropriate amount of white flour to the hard surface after cleaning it, in order to prevent the dough from sticking to the hard surface.
    • Roll out the dough on the hard surface well, and start cutting the dough through sectors of different shapes or according to the desired shape (for example, round).

    Cheese filling with cheese and dates:

    • Start stuffing the shredded cheese dough.
    • Add to the center of the dough a grain of cheese with some small pieces of dates, then start closing all sides of the dough tightly over the filling so that the filling does not fall out while frying.
    • Repeat the previous step until you have filled all the cheese dough.

    Fry the cheese with dates:

    • Prepare a deep frying pan suitable for frying cheese with dates.
    • Put the pan on medium heat, add to the pan an appropriate amount of frying oil, wait until the oil heats up well, then add the date cheese to the hot oil.
    • Leave the date cheese in the hot oil for a sufficient period of no less than about four minutes or until the date cheese is well set, browns and takes on a dark golden color.
    • Repeat the previous step until you have finished frying all the cheese with the date filling.
    • Prepare a large, flat plate and place an appropriate amount of blotting paper on it. Take the date cheese from the hot oil to the blotting paper, until the date cheese is completely dried from the oil.

    Serving the cheese with dates:

    • Prepare serving dishes suitable for serving cheese with dates.
    • Add appropriate and equal amounts of cheese with dates to the dishes, adding an appropriate amount of sweetened and condensed milk to it, and adding an appropriate amount of ground cardamom powder on it.
    • You can serve the cheese with dates by placing the sweetened condensed milk in a suitable bowl.
    • Then add to the pot of sweetened condensed milk and cheese with dates, stir the cheese with fried dates with condensed milk.
    • Leave the cheese with dates long enough in sweetened condensed milk, so that the cheese absorbs the milk.
    • Place the cheese with dates with condensed milk in suitable serving dishes, with the addition of ground cardamom powder to it.
    • Serve the cheese plates with dates cold with your favorite hot or cold drink.
